From as far back as I can remember we would always have soup on the table to start the meal, my mother was a prolific soup maker who could produce soup out of nothing, like a magician.
It would arrive on the table smelling wonderful, some times it would be cold soups in the long hot summers, served simply with chunks of country bread, chopped vegetables and olive oil.
For the older members of the family, home made wine was offered; winter soups were much heartier, chunky and robust. As I was the youngest of three brothers and the keenest to learn I was always with my mother and watched avidly as she applied her knowledge and skills to making soup.
I always knew I wanted to be a chef so Mama Gallucci soups is the realisation and living testament to the skills she taught me in those early days and I thank here for that, all though not with us now, her legacy of soups lives on in Mama Gallucci soups and that`s how it all started.
